If you have been looking for the perfect vanilla cupcakes to make from scratch look no further these cupcakes from cupcake Jemma are the best recipe I have found and tried on many, many occasions.
These are honestly the fluffiest cupcakes you could ever taste.

Recipe: (Makes 12 Cupcakes)
125 grams of Self-raising flour (1 Cup)
125 grams caster sugar (1/2 Cup)
1/4 teaspoon baking soda
125 grams unsalted soft butter (1 stick)
2 large eggs
1 1/2 tablespoons milk
1/4 teaspoon vanilla extract
Instructions:
place self-raising flour, caster sugar, and baking soda through a sift. Add softened butter and eggs and mix on a low speed to incorporate the ingredients together. Once they are incorporated turn up to a medium speed for about a minute, then slow it down once more and add the milk and vanilla extract. Once its incorporated turn up the speed to a medium speed once more to make sure all the ingredients are well incorporated.
Pre-heat the oven to 340 and bake for 20 minutes
Scoop out your batter and place in a cupcake tin for 12 cupcakes.
